One of our favorite things about the garden is making recipes with whatever we have growing the the garden. Here are a few photos of Eggplant Parmigiana Verde. This dish was made by Catie McEntee, who runs the SOUL Garden at NCSU and Claudio Kriegel, NCSU Sustainability Steward.
